Hacienda El Carmen, in Jalisco, Mexico, was built by Carmelite monks in 1705. It once had 22,000 hectares on which the monks produced corn, wheat, oats, sugar cane, mezcal and sorghum. In 1996 it was restored by Mónica Baeza and today is a hotel, restaurant and spa.
